This recipe will satisfy your cravings for creamy avocado, but it won’t do the damage to your waistline. 🙂 I first encountered Pineapple Guacamole at a delicious Mexican restaurant in Texas years ago…actually it was bacon pineapple guacamole, but let’s forget the bacon part! Haha!
I eat a low fat vegan diet. Avocados, being so high in fat, are not a huge part of normal routine. To keep this recipe lower in fat, I decided to substitute the second avocado for sweet green peas. I was so happy with this recipe! It is very creamy, zesty, and sweet! The pineapple adds a tropical twist! Feel free to get creative and add more seasonings if you like! I think mango would be a great addition as well!
I like to eat this guacamole with fresh carrots! This would be delicious used as a spread on a sandwich or wrap.

Ingredients (Makes 3 Cups, 6 Servings)
2 Cups Green Peas, chilled
3-4 Garlic Cloves
1 Large Avocado, ripe
Juice of 2 Limes
1/2 Teaspoon Cumin
Splash Pineapple Juice
1/4 Cup Red Onion, Chopped
1/2 Cup Diced Fresh Pineapple
2 Tablespoons Cilantro, chopped
Directions
1. Place the green peas and garlic into the food processor. Puree until finely chopped.
2. In a mixing bowl, smash the avocado with a fork.
3. Add all ingredients to the mixing bowl including the green peas and garlic.
4. Mix thoroughly and serve immediately!
