Nostalgia in a glass!  I don’t know about you, but PB & J totally takes me back.  I remember exactly how those scrumptious PB & J sandwiches tasted in my lunchbox at school.  It is truly a match made in heaven.

Enjoy that same flavor, but in smoothie form (and without the gluten LOL)!  This smoothie is great as a pre or post workout energy drink because it’s packed with tons of plant based protein and healthy fats from Peanuts and Flaxseed (plus it’s oil and salt free!).  I’m totally in love with this healthy jelly  –  it’s perfectly sweet yet free of refined sugar!!  The chia seeds are essential and give the jelly its gelatinous texture.

I like to munch on this smoothie with a bowl & spoon! Smoothie Bowl time!

Ingredients for PB Layer (Serves 2)

1/2 cup Fresh Ground  Peanut Butter, unsalted

2/3 Cup Vanilla Almond Milk, unsweetened

1 Tablespoons Ground Flaxseed

2 Medjool Dates, pitted

1 Cup Ice

Ingredients for Jelly Layer

2 Cups Black Grapes

3 Medjool Dates, pitted

1 inch slice Organic Firm Tofu

1 Tablespoon Ground Chia Seeds

1/4 Teaspoon Pure Vanilla Extract

1 Cup Ice

Directions

1. Blend all ingredients for the PB layer and then set aside. (Put this layer freezer for a moment while you make Jelly layer.)

2. Blend all ingredients for the Jelly layer and set aside.

3. Layer the Peanut Butter smoothie first in your glass because it is more dense, and then pour the Jelly smoothie on top.
