Mediterranean Salsa

This is a delicious and versatile salsa! It is totally addicting which is okay because its 100% healthy and low in fat!  My dad and stepmom visited us this week in Vegas all the way from Florida.  We spent a lot of time eating and then eating some more – while we were eating lunch, we were planning our dinner, haha!  Isn’t that what you do when on vacation?!  Well when we weren’t eating, we were relaxing by the pool, which is what prompted me to make a light summer snack for us.

Cucumbers are a great source of B vitamins and since they are 95% water they are ultra hydrating and excellent at eliminating toxins from the body!

Red Onions are rich in the anti-cancer compound, organosulfur.  These compounds can break down cancer cells and halt growth!

Dill is a healing herb that can alleviate indigestion, soothe an upset stomach, and lessen flu and cold symptoms!

Mint is another healing herb that is refreshing and soothing.  It contains a good amount of folic acid, iron, and copper!

I like to eat this with pita chips or tortilla chips.  For a full salad, this salsa could be mixed into a bowl of fresh chopped romaine and topped with extra lime juice!  I also LOVE this salsa over hummus and rolled up in a Collard Leaf or a Sprouted Ezekiel Tortilla.  Enjoy!!

Ingredients

1/2 English Cucumber, chopped

3 Roma Tomatoes, chopped

1/2 Red Onion, chopped

2 Tablespoons Lime Juice

1 Tablespoons Fresh Dill

1 Tablespoons Fresh Mint, chopped

Directions

1.  Mix all ingredients in bowl.

2.  Chill in refrigerator for at least 30 minutes before serving to let the flavors meld.

  2. I couldn’t find organic plum tomatoes anywhere. What’s your thoughts of using regular tomatoes, but removing the juicy seeds?

  5. I finally was able to get the organic plum tomatoes at Whole Foods today. I just put the dish in the fridge to chill. What I tasted so far is fantastic. A definite keeper. I think it would be good over quinoa as well. 🙂
