The Lipstick and Berries Ice Dream Truck is rounding the corner! What flavor are you ordering this time? How about Mint Chocolate Chip? Yay! It’s vegan and nutritious!!

It just started getting H.O.T here in Las Vegas, but I still love the weather here!  Some say it is too hot, but I disagree. I love the heat and the low humidity.  Even in the dead of summer, once the sun goes down, you an still enjoy a great patio.

I was seriously indecisive on how I wanted to recreate this ice cream classic. With fruit or without fruit?  I just decided to do both.  Why not have options?

Speaking of options, try recipe #1 in smoothie form! Add more greens for extra protein and this would be a stellar pre or post workout meal!  You could also make Recipe #1 a raw vegan version by substituting chocolate chips with raw cacao or carob powder.

Recipe #1 Ingredients (serves 2)

1/2 Cup Non-Dairy Milk, unsweetened (Soy, Almond, Hemp)

2 Ripe Bananas

1/4 of an Avocado

1/2 Teaspoon Pure Vanilla Extract

3-5 Medjool Dates, pitted

2-3 Drops Peppermint Essential Oil (I recommend Young Living) or Fresh Mint Leaves

2 Tablespoons Dark Chocolate Chips, Vegan Oil-Free (I use Enjoy Life) + more for chunky mix-ins

A few Baby Spinach Leaves (optional for coloring and/or added nutrition)

**This version with the baby spinach will be more of an olive green color, just fyi. Fab taste just not as pretty.  

 

Recipe #2 Ingredients (serves 2)

2 Cups Non-Dairy Milk, unsweetened (Soy, Almond, Hemp)

1/2 Teaspoon Pure Vanilla Extract

1 Stevia packet

2-3 Drops Peppermint Essential Oil (I recommend Young Living)

1/2 Cup Cashews, unsalted 

2 Tablespoons Dark Chocolate Chips, Vegan Oil-Free (I use Enjoy Life) + more for chunky mix-ins

Few Drops of Green Food Coloring (optional)

 

Directions for Both Recipes

1.  Puree all ingredients (except chocolate chips) in Vitamix or high powered blender until smooth.

2.  Add in the reserved 2 tablespoons chocolate chips and blend until chopped medium/fine.  

2.  Pour entire mixture into shallow baking dish, plastic container, or into ice cube tray. (I use ice cube tray)

3.  Freeze mixture at least 2 hours or until frozen desired consistency is reached.

4.  Slightly defrost.  Options:  Scoop out of pan with ice cream scoop.  Another option is to pop out the ice cubes, return to Vitamix for smooth blending and then serve!

 

**For Food styling and photography’s sake I added a couple drops of green food coloring to the ice cream.  When I am just making at home to eat myself I do not add the coloring.  The photo above is made with stevia version.

**If you would like this ice dream to have a more realistic ice cream texture, then you can use full fat coconut milk.  By using a nut milk or soy milk it will have a light a refreshing texture, which is what I personally prefer! Perfect for a summer snack!
