Isn’t food better in pink?!  How cute would these parfaits be for a summer breakfast?  Overnight oats are so easy and free up your morning because your breakfast is already prepared!  Kids love overnight oats too!  I decided to puree a fruit boost into into my milk to give it some antioxidant power!  because berries are some of the most potent anti-aging fruits out there! Add berries to your diet whenever possible.   The possibilities are endless with overnight oats, but here is a little combination I made for myself and my girlfriend today.  I layered overnight oats, chopped pistachios, pineapple, and papaya!  By using dates as a sweetener this is 100% refined sugar free, and full of fiber!

What type of milk to use?

I lean toward organic Soy or Almond Milk.  Organic Soy is lower in saturated fat, but I just really love almond milk! 🙂  If you are allergic to nuts, then Hempseed milk is an awesome alternative!   Hempseed Milk has a lighter texture but still very delicious!  As far as coconut milk beverage is concerned…drink with caution.  Coconut Milk is very high in saturated fat.  It is quite delicious, but just beware of how much you are consuming.  QUICK TIP:  If you want coconut flavor but not the added fat…add 1/4-1/2 teaspoon of coconut extract to your soy milk and it will taste like coconut milk sans the fat overload! YAY!

I suggest rotating your non-dairy milks.  They all contain different vitamins, so it is important not to only drink just one.


Ingredients (Yields 2-4 servings)

2 Cups Non Dairy Milk, unsweetened (Almond, Soy, Hemp Milk)

1 Cup Raspberries (fresh or frozen) or 1 Smoothie pack Pitaya Plus

2-3 Medjool Dates, pitted (or sweetener of your choice)

1 & 1/2 Cup Uncooked Old Fashioned Oats

Chopped Fruit – I used chopped Papaya and Pineapple

Toppings – Dried Coconut, Chopped Nuts or Ground Flaxseeds would be great!


1.  Combine the milk, berries/pitaya, and dates in a high powered blender.  Puree until smooth.

2.  Pour mixture into an airtight container then mix in the Oats.  Chill this overnight in the refrigerator.

3.  When you are ready to eat, stir in all the mixed fruit and top with your superfood sprinkles! Yum!
