Peanut Butter Cinnamon Raisin Protein Cookies

Peanut Butter Cinnamon Raisin Protein Cookies! These are an awesome pre or post workout treat.  Vegan, low sugar (pure maple), plant based protein, and oil-free! (Dessert)

Who loves peanut butter?! I do! These cookies are delicious and are perfect as a pre or post workout treat!  My peanut butter protein cookies are vegan, low sugar, contain TONS of plant based protein, and are oil-free! They are a healthy vegan girl’s protein miracle!  I was inspired by the Peanut Butter Cinnamon Raisin Swirl peanut butter spread that you buy at the grocery store.  I thought, hmm what a classic combination…how can I transform this into something that is 100% nutritious?! These cookies are my answer to that! Please enjoy and take some to your personal trainer LOL; show them that plant-based protein can totally rock!

Ingredients (makes 8-10 cookies)

1, 15 ounce can Garbanzo Beans, salt-free, drained & rinsed

2  Tablespoons Almond Flour

3 & 1/2 Tablespoons Peanut Butter

1/2 Cup Applesauce

1 Teaspoon Vanilla Extract

2 Tablespoons Raisins

1 & 1/4 Teaspoon Cinnamon

1 Tablespoon Pure Maple Syrup


1. Chop/Puree the beans in a food processor or smash with fork.

3.  Add beans to all other ingredients in a  mixing bowl, and combine thoroughly.  

4. Line a baking sheet with parchment paper and drop cookies onto pan.  Flatten out into cookie shapes.  

5. Bake at 350 degrees for 20-25 minutes.
