Pumpkin Overnight Oats

Overnight Oats are one of my favorite breakfast meals. Not only are they quick to make the night before, but waking up and opening the Lipstick and Berries Refrigerator to find my breakfast ready to go is a delightful treat.  It leaves me more time in the morning to sip on my tea and to work on further recipes to share with YOU!

My husband loves this Pumpkin Oats recipe because he loves oatmeal!! I actually think he has eaten oatmeal every morning each day of his life!  Oats help keep his cholesterol in check and the fiber keeps him from searching for sugary snacks before lunch time. This recipe boosts the fiber through the roof, with 3/4 of a cup of punkin’ boosting 2-3 extra grams of fiber on top of the oats and dates.
This could also be made before a workout or eaten as a post workout snack because Pumpkin has more Potassium than a banana (approx 560mgs compared to 440 for a banana) which helps aid in the decrease of muscle soreness.

Ingredients (Serves 1-2)

1 & 1/2 Cups Almond Milk, unsweetened

4 Medjool Dates, pitted

1 Cup Uncooked, Gluten Free, Old Fashioned Oats

3/4 Cup 100% Pure Pumpkin Puree 

1/2 Teaspoon Pumpkin Pie Spice

2 Talespoons Raisins

1 Tablespoon Pure Maple Syrup (optional if you like it super sweet)

(Additional Mix-ins: Raw Cacao, Walnuts, Vegan Choc Chips)  


1. Blend the Almond Milk with the dates in the Vitamix or high powered blender.  

2.  In a mixing bowl, combine the almond milk mixture with the oats, pumpkin, spice, and raisins.

3.  Store in an airtight container overnight.

4.  Add any additional mix ins in the morning before eating!
