Spiced Zucchini Banana Bread

I.  Love.  This.  Bread.

This zucchini bread makes me Warm and Cozy and Tingly and Lovey.  (Is Lovey a word? Ha. Ok, now it is!)  These fragrant spices are exactly what I crave during the fall and holiday season. This quick and simple recipe is as healthy for you as it is tasty! There is no need for oils in this recipe;  the banana and zucchini replace oil for a lower calorie, more nutrient-dense dessert.  It is amazingly moist and bursting with flavor! I love it when desserts are guilt-free!

You know what the greatest thing about being vegan is??? Being able to try ALL of your batter without having to worry that you’re going to get salmonella poisoning from a raw egg!  Haha.  When I was a kiddo, I always remember sneaking to lick the cake batter off my mom’s mixer tools.  She always said, “Don’t eat that, there is raw egg on there!” No worries anymore!

Ingredients (makes 8, half inch slices)

3 Small/Medium Bananas (two for blending, one reserved for slices)

8 Medjool Dates, pitted

1/4 Cup Applesauce, unsweetened

1 Tablespoon Vanilla Extract

1 Cup Grated Zucchini (about 2 small zucchinis), thoroughly pressed of excess water 

1 Tablespoon Ground Chia

1 & 1/2 Teaspoon Cinnamon

3/4 Teaspoon Nutmeg

1/4 Teaspoon Ground Ginger

1/8 Teaspoon Ground Cloves

2 Cups Oat Flour

1 Teaspoon Baking Powder

1 Teaspoon Baking Soda

1/4 Cup Walnuts, chopped (optional)

Directions

1.  Place only TWO bananas in vitamix, along with the dates, applesauce, and vanilla extract. Blend until smooth. (If you do not have Vitamix, soak your dates for 30 minutes prior in water. Drain dates and then add to blender.)

2.  Mix the zucchini and all dry ingredients together in mixing bowl.

3.  Add the banana/date mixture to the dry ingredients, and combine.

4.  Fold in the sliced banana.

5. Bake at 350 degrees for 40-45 minutes.

**Note: After I grated my zucchini, I pressed it between many paper towels to remove the extra water. Zucchinis hold a lot of water, so watch out!  I made this one time with large zucchinis and also forgot press out the water, and it was too moist.  Just a little tip.  Also make sure to let this sit and cool 15-30 minutes before cutting.

This is not a “crumbly” bread. It’s very moist the way I like it.  Just fyi.

  1. Is it okay to leave the who banana pieces out? Not a big banana fan but love the bread :). Also is that walnuts on top of the bread?

    • Hi! A Vitamix is a commercial grade high powered blender. I like to use a Vitamix because it require less chopping beforehand. A regular blender can always be used, it just may require a little more prep work, like soaking nuts/driedfruit or pre chopping veggies before adding to blender.
