No-Chicken Salad

This is a fun and easy recipe for a vegan “chicken” salad.  The “chicken” component consists of protein-rich tempeh.  I do not use processed foods very often, but I was experimenting and I thought this recipe was worth sharing.  Tempeh has been a favorite food and staple source of protein in Indonesia for several hundred years.  Of course, tempeh is not meat, and if you expect it to taste like meat, you won’t like it…but who would be reading this blog and want it to taste like meat anyway?! Tempeh tastes sort of like…well…tempeh! Some describe it as  nutty. I say it has a taste unique to its own.  Tempeh has a nice firm texture that does not break apart easily like tofu. Its perfect for a vegan chicken salad.

Ingredients

1, 8 ounce package Garden Veggie Tempeh, cubed

1/2 Cup “Healthy No-Mayo”

1 Cup Kale or Spinach, finely chopped

1/2 Cup Purple Cabbage, chopped

1 Large Carrot, shredded

1/4 Cup Raisins

1 Teaspoon Balsamic Vinegar

1/2 Teaspoon Coriander

1/2 Teaspoon Paprika

2 Teaspoons Lime Juice

1 Celery Stalk, finely chopped

Directions

1. Combine and mix all ingredients in a bowl and chill in refrigerator for at least one hour before serving.
