Vegetable Ragoút

Vegan SOS-Free Vegetable Ragout! From

If you thought I misspelled the word Ragú, then you may be correct, if we were talking about the Italian dish.  Ragú is a well known dish in Italian cuisine; A meat-based sauce served over pasta. My Vegetable Ragoút is a well known, versatile dish in French cuisine which is perfect fit for an SOS-Free twist.

The colorful medley of veggies in this dish is enough to satisfy your full spectrum of nutrients, while keeping your calories low, your tastebuds full, and your body energized with all the right amounts of sugar and fiber (and a little extra protein from the edamame).

2 Leeks, thinly sliced (white and light green part only)

3 Garlic Cloves, minced

1, 10 ounce package Frozen Corn

1/2 Lb Yellow Squash, sliced

1 Cup frozen, Shelled Edamame

2 Carrots, shredded

1 Cup Vegetable broth, no salt added or low salt

3 Cups Cherry Tomatoes, sliced

1 Teaspoon Dried Tarragon

1 Teaspoon Dried Oregano

1 Teaspoon Dried Dill

1 Teaspoon Dried Basil


1.  Add a few tablespoons of water to a large skillet and heat until sizzling. Add the leeks and garlic and water saute about 3-5 minutes until fragrant.

2.  Add corn, squash, edamame, carrots, and broth and stir until squash is tender and all is heated throughout. 

3. Add tomatoes and all seasonings and heat until tomatoes are soft.
