There is only one thing that I do not like about Butternut Squash. It is really hard to cut!!! Other than that, butternut squash is my homie, and to keep the peace I buy it precut. Thank you Whole Foods Market for making my life easier!

This butternut mousse contains all these golden beauties: Carrots, banana, and mango!

One cup of Butternut Squash has almost 500 mg of potassium and almost 300% of RDI of Vitamin A!  Researchers at the Jules Stein Institute at the University of California determined that women who consume carrots at least twice per week – in comparison to women who consume carrots less than once per week – have significantly lower rates of glaucoma (damage to the optic nerve often associated with excessive pressure inside the eye). Hmmm, good news! Let’s keep our eyes healthy so we can see all this glorious food!

This recipe could also be made into a smoothie. Just add ice!


3/4 Cup Raw Butternut Squash, diced

3 Baby Carrots

1 Banana

1/2 Mango

1 Medjool Date, pitted

1 Cup Vanilla Hemp Milk, unsweetened

1 Teaspoon Cinnamon

1 inch Orange Zest

1/2 Teaspoon Vanilla Extract


Blend it then must serve in a cute teacup! 🙂
